I use a lot of mince in Thai cookery; laarb is a great way to use pork or chicken mince, and also as meatballs in thai rice soup.

I now have a big ol’ craving.

In reply to Dominic. Yes it works well, but it's important you chop it finely otherwise you'll find yourself chewing for hours. Not fun. Soup sounds amazing too. J

I love this recipe, it makes me miss home. The patties sounds delicious and the salads sounds perfect. I think I’m gonna try these recipe for world cup night. I think adding kafir lime leaves instead of coriander leaves in the mince will work well, too. Thanks for sharing.

omg! I love the idea of the lemongrass in with the mince, how amazing… this reminds me of a wonderful recipe for leek and potato soup but you substitute half the leek for lemongrass and it would go well with these served chilled as a starter… in fact you’ve inspired me to make this this weekend.. thanks once again!
