I just got back from Sicily where arancini are the order of the day so definitely feeling the fried vibe at the moment. I don’t do it much as I’m a bit scared of all that boiling oil, but these look worth the risk 🙂

A little tip for separating onions is to chop each one into disks then soak them in hot water for a few minutes. The layers will fall into individual rings with a gentle push.
